Vietnamese Clay Pot Fish with Garlic & Sugar

Catfish is widely available and commonly eaten in Vietnam. This freshwater fish is a classic southern Vietnamese dish cooked in a clay pot. Watch all of Chef Tomm's Grokker Premium video for quick recipes.

Cooking Recipe

Servings: 2

Ingredients:
2/3 pound catfish steak, cut into thirds
2 tbsp sugar
Water
1 clove garlic
3 tbsp fish sauce
1/2 tsp ground black pepper
1 scallion cut into 1€ lengths
4 sprigs of cilantro, cut
Hot water

Directions:
1. Cut the fish into 1 inch slices, discard head and tail of the fish.

Caramel Sauce:
2. Over medium heat add sugar and water into clay pot stirring frequently for the sugar to caramelize, 2 to 3 minutes. Add garlic and stir for 1 minute.

3. Add garlic, fish, fish sauce, hot water (to the top), cover the lid and cook for 5 minutes on one side, flip then cook again for 5 minutes with the lid off.

4. Add pepper, green onions, and cilantro on top for garnish and serve!
