Hi Deepakshravan GN. We have a couple of vegetarians in our office, so this is some advice from them.
I would say start off breakfast with a smoothie (fruits, veggies, peanut butter, etc), almonds, definitely oatmeal or tofu omelets and potato's for sure.... Any combo of that should take less than 15 minutes. For dinner, I would recommend black beans and quinoa, rice with broccoli and cauliflower, hummus and pita with veggies...
I've attached a few recipes that you may want to try. The last one takes 15 min to prep but cooks in crockpot for several hours.
