Grilled Halibut and Arugula Pesto

How to make grilled halibut with homemade arugula pesto and lemon spring vegetables and fresh grated Parmesan cheese.

Prep Time: 5 minutes
Cook Time: 16 minutes
Ready In: 21 minutes

Ingredients:
Arugula
Pine nuts
Garlic
Lemon juice
Olive oil
Parmesan cheese
Shittake mushroom
Shallot
Green & white asparagus

Directions:
1. In a food processor throw in your arugula, garlic, pine nuts, lemon juice, drizzle in olive oil, parmesan cheese and blend to make the pesto.

2. Chop your mushrooms, shallots, and asparagus.

3. In a hot pan drizzle olive oil and saute the mushrooms. After the mushrooms are done just add in the shallots and asparagus.

4. Take the halibut and drizzle olive oil and coat with seasoning salt and pepper on both sides. Grill it on the grill and plate it.

5. Plate the halibut and the vegetables together and serve!
