Hi S Gretchen Johnston. Great question! The first video I've attached is listed at beginner HIIT. The second is an intermediate but low-impact, so it may be fine. I've also attached one by Pace and Go that is also listed as intermediate. This is a tough workout, but do-able, especially if you wanted to modify or perhaps go at a slower pace than them.
When you search for HIIT workouts, maybe don't limit to beginner, as you won't get too many results. Maybe also look for intermediate, but add some other search criteria such as length of video (ie, I can keep up with 7 min of intermediate/high intensity but doing a HIIT video at this level for 30 min is super challenging for me).
I find Pace and Go's 7 Minute HIIT videos great, and I also really enjoy Kelly Lee's HIIT videos.
When I really want to push myself, I will do Sarah Kusch's or Le Jon's HIIT videos...but I have to be ready to really challenge myself 😊
