This recipe is a creative and delicious way to enjoy a vegan version of the Mexican taco. Using ground walnuts mixed with coriander and cumin for the “meat,” this fresh healthy taco will excite your taste buds. Cooking Recipe

Ingredients:
Filling:
1 & 1/2 cups raw walnuts, ground in a food processor or high speed blender
1 & 1/2 tsp ground cumin
3/4 tsp ground coriander
2 tbsp Nama Shoyu

Shell:
4 red cabbage leaves or 4 Romaine whole lettuce leaves

Toppings:
1 cup shredded romaine lettuce
Fresh Tomato Salsa
1 cup sunflower sprouts
Chopped avocado
Fresh lime (optional)

Directions:
1. In a bowl, add in your ground walnuts (you can use a food processor or high speed blender to grind), cumin and coriander and mix well. Add the Nama Shoyu and mix well.

2. Place a red cabbage or romaine lettuce leaf on a plate and add your walnut filling. Top with shredded lettuce, fresh tomato salsa, spouts, and chopped avocado. Squeeze fresh lime over the top (optional) before serving.
