I made this dish, omitting the chili pepper because of my two little ones. It was really quite nice even without, very mildly spiced. Unfortunately, the little ones didn't care for this dish very much; I think the newness of it and the texture of the chicken threw them, but I suppose there's a hidden blessing in there: Next time I'll make it for myself only, full on with the chilis and all. Thanks Chef Tomm. I made this (adding 1 chicken breast which I started just before adding the shrimpies) and it was quite good. I think I had too much sauce and didn't use it all, so not sure if I got the balance right or not, but there were no complaints. Next time I'll up the noodle quotient and use more of the sauce to amp the portion sizes. I used 100g of noodles which I reckoned to be about 4 oz, but I thought it could have been more generous. Also, I used a little extra bean sprout (so much comes in the pack), adding 1/2 when the egg went in. I did the same with some of the green onion and the peanuts as well Thanks again!
Thank you chef Tomm. This came out quite good. I did add 1 thinly sliced chicken breast, being an inveterate carnivore. I felt the eggplants were a little difficult to manage since my wok isn't that big but they cooked mostly evenly. That may have been because I used conventional eggplant, not sure. I think in the future I will adapt this recipe w/o the eggplant (not being a big fan of the vegg, except for parmagiano), using other vegg like bok choy, carrot etc. All in all very good result.
