Ingredients:
Salad Dressing:
2 tbsp lemon juice
2 tbsp extra virgin olive oil
1 tbsp minced fresh oregano, optional
Salad:
1 head Romaine lettuce, cut into 1-inch pieces
1 red bell pepper, chopped
1/2 cucumber, seeded and chopped
1 tomato, cut into wedges
1/4 cup pitted Kalamata olives
1/4 cup almond cheese optional
Sea salt to taste
Fresh ground black pepper to taste
Directions:
1. Whisk together lemon juice, olive oil, oregano and salt. Then in a large salad bowl toss the lettuce and dressing.
2. Then add the chopped tomatoes, cucumbers, chopped red bell peppers, and Kalamata olives and toss it again. Finally, add cheese and toss one more time. Season with pepper and sea salt to your taste and let the salad marinate until ready to serve.
