Hi! In my quest to eat better to feel better, I've come across some really good quick recipes and this is a new found favorite that I'd like to share. It's really easy, so even if you don't cook, it's doable. :)
7 (31-count) shrimp, cooked8 pieces of artichokes, jarred or canned10 grape tomatoes, halved1 Tbsp. Garlic (or more if you love it like me)1 Tbsp. Feta1/4 c. Quinoa, cooked (I like the Success instant brand)1/2 c. WaterPam cooking spray or EVOOGarlicpowderSalt, to tastePepper, to tasteDill, dried or fresh, to taste
Spray skillet with oil cooking spray OR drizzle about a Tbsp of EVOO in a skillet on medium heat. Add in artichokes and cook until warm or very lightly browned (only a takes a few mins). Add the cooked shrimp and cook for 60 seconds, stirring. Remove the shrimp and artichokes, set aside. Quarter the tomatoes, add to the skillet with garlic and water, let it come to a simmer while mashing the tomatoes in the pan. Don't let the water boil out. Add some garlic powder, salt, pepper. Turn off heat and add artichokes and shrimp back in. Add in quinoa and dill and give it a stir. Put in your favorite bowl, sprinkle with Feta. Yum!
