I need help with/ideas for meatless and soyless meals... oh and I'm allergic to all things from the sea so no fish or crustaceans.

I love veggie 'fajitas' on ciabatta bread. I make ciabatta bread from scratch using Bincy's recipe on YT. I use butter and put sliced zucchini (and yellow squash if avail) in first, flip after it starts to golden, then add sliced sweet onion, sliced red bell pepper, sliced mushrooms and sliced garlic. Stir fry for about 10 minutes adding seasonings (I use basil and something salty like fajita seasoning which has MSG or cajun seasoning.) Once everything is wilted and soft to your preference, serve on ciabatta with meunster cheese and mayo or aoli or green chile. For meat lovers you can added smoked sausage slices but I prefer the veg version.
