This dish is an old-fashioned Chinese classic. Egg foo young is an omelette dish consisting of patties fashioned from vegetables, seafood or meat, and bound together with eggs. Make them for your family or kids, using bits of leftovers. To create your own version, you will need a ratio of ~1 1/4 cups of cooked meat and vegetables for every three eggs.
