Pineapple Herbal Tea

*Prep a fresh pineapple ahead of time by scrubbing the skin in a sink full of warm water and baking soda. After cutting open the pineapple, freeze the skin and core.*

Ingredients: 1 Section of clean pineapple skin and a few pieces of the core
1 Cinnamon stick
1 Lemon-quartered
1 Piece of ginger
Sweetner of your choice (honey, sugar, agave, etc)
Steps:
1. Fill a pitcher with water and then pour it into a pot.
2. Add all ingredients (except sweetner) and bring it to a boil. Boil for 5 minutes then lower the heat.
3. Simmer the pot for 1 hour then remove from heat.
4. Add sweetner of your choice and pour into a pitcher. *Optional-you can strain the ingredients or leave them in the tea.*
5. Tea will keep for about 1 week in the fridge.

fennel and cardamon gelatin bites
1 Tbs fennel seed and 1 broken cardamon pod with 1 quart hot water, cover to keep oils in, let steep for at least 15 minutes (longer for stronger bites--may have to reheat)
in a 1 1/2 cup measuring cup measure pour in 1/4 cup cold (strained) herbal tea (depending on the tea the day before i may use this or portion a bit of the hot tea , in a metal mesuring cup and nestle it in ice)
spinkle 1 packet of unflavored gelatin on top, stir and let sit for a minute or so,
then fill with strained hot fennel and cardamon tea (stop when it is at 1 1/4 cups on the measuring cup. stir until all gelatin is dissolved.
pour into into a ice cube tray (i use a plastic one that measures out 1 1/4 cup liquid just about to the top of each cube indent)
place in refriderator and enjoy after 3 hours of jellling.
Can be eaten as a whole bite, chop up one into a serving of cold fruit, or watch it melt on a hot serving of vegetable.
Enjoy the remainder of the tea as a drink, or as a flavoring in a stir fry, etc. or freeze .

tea: quart pitcher: slice ginger and tumeric, a few dried rose petals (if using rose water, one small spritz) , pandan leaves (frozen -fresh has a bit more oomph), dried lemon grass (fresh works fine here), skin /flesh slice of a lemon/mandarin (the lemon tree cross pollinates with a neighbors mandarin but either can be used), a squirt of honey (after adding hot water (palmetto )), and a finger crushed and twisted artichoke leaf (when in season)
pour in hot water, let brew, pour off morning cup, add more water, fill tumbler for work day tea, add more water for second , third, ...solution is diluted as day goes on.
