A Mexican staple made with the freshest ingredients. The halibut is cooked with the acidity of the lime and orange juice accompanied by fresh avocado, red onion, diced tomatoes and serrano chilies.
2. Homemade Pico de Gallo Salsa
Simple and refreshing! Always a crowd pleaser at parties, watch this simple recipe and make it your own.
3. Seared Steak Fajitas
For a fast, low-calorie dinner, try this Tex-Mex classic. It uses top round steak, which is a very lean cut of beef, plus it packs plenty of fresh flavor. Other lean cuts of beef, like eye of round or top sirloin, will also work in this recipe.
4. Chicken Fajitas
EAT IT is a brilliant home cook who has been doing some lovely simple recipe videos. Its now up to you.... what would you like him to cook for you?
5. Vegetarian Enchilada
This year, for Cinco de Mayo, I finally managed to get it together enough to plan (a whole 48 hours in advance) with our friend Carlos to share his mom's avocado enchiladas recipe aka Enchiladas Banderas. We've been talking about doing this recipe for over a year, since the first time he made these for us at our friend Amalia's house. Dayummm. They good, alright. Vegetarian, healthy, fast, fresh (and cheap if you live in Guadalajara, or somewhere else where avocados literally grow on trees) these vegetarian enchiladas are definitely a new weekly special around my house.
6. How to Make Chicken Enchiladas
Enchiladas Verdes aka Green Chicken Enchiladas are a Tex-Mex favorite, with a fresh and easytomatillo sauce and shredded chicken filling, topped with melted white cheese.
7. Tortilla Soup
A classic Mexican favorite, we thought fall was the perfect time to highlight how to make this warm, rich soup!
8. How to Make Authentic Enchiladas
These authentic chicken enchiladas with mole sauce were inspired by a dish served at Seattle's La Carta De Oaxaca restaurant. Chocolate and dried chiles make a rich and flavorful sauce that tops the moist and tender chicken enchiladas.
9. Taco Pasta Salad Recipe
The taco flavors of this pasta salad comes from the salsa and the taco seasonings so be sure to use a really good brand of both. I used a smokey salsa from the deli that was full of flavor and spices and a homemade taco seasoning mix. Because of this I didn’t have to add in any additional seasonings like cumin, paprika, salt, pepper, etc. If your salsa is on the blah side you may need to spruce up the noodles by adding in some spices like cummin, chili powder, oregano, fresh garlic, etc. The noodles should taste flavorful enough by themselves.
10. Smoked Chicken Cheese Quesadilla Recipe
This ChickenCheese quesadilla recipe is so easy to whip up which is always a plus when it comes to lunch. I vary the fillings so that we don’t get bored. So far this week we’ve had spinach, gouda and chicken, roasted tomato and cheese, and this smoked chicken and cheese, all super delish!!!
