Ingredients:
1/2 cup (100g) butter
1 cup (200g) brown sugar
2 eggs
1 & 1/4 cup (200g) self raising flour
1 tsp of baking powder
3 & 1/2 tbsp (100g) crunchy peanut butter
4 tbsp of your favourite jam
Directions:
1. Preheat the oven to 180°C. Beat the butter and sugar together until light and fluffy.
crack in the eggs one at a time and stir to combine.
2. Fold in the flour and baking powder to form a dough. Mix through the crunchy peanut butter.
3. Chill the mix in the fridge for an hour so that its easier to handle. Mould 1 tsp sized lumps of the mix into rounds and push a wet finger into the centre to form a well.
4. Place them onto a tray lined with greaseproof paper, keeping them a few centimetres apart to allow them to spread. Drop a little of the jam into each well.
5. Place into the oven and bake for 12 minutes until golden all over. Take out the oven and place on a cooling rack to cool a little.
6. Serve warm with an ice cold milkshake for an awesome treat.
