I am not a professional nutritionist, just a fellow Grokker user like you, but I think "vegetables" are like "workouts". The best "workouts" to do are the ones that we find super-fun and that we genuinely enjoy and wish to repeat. Similarly, the best "vegetables" to eat are the ones that we enjoy eating. I have heard that eating a rainbow of colors of vegetables throughout the week increases the likelihood that we will give ourselves a full range of vitamins, minerals, and nutrients.
