1 large English cucumber, coarsely grated
zest and juice of 1 lemon
1 garlic clove, finely chopped
small handful fresh mint leaves, finely chopped
2 cups Greek yogurt
salt & pepper to taste
olive oil, to serve
1. Grate the cucumber and squeeze out excess liquid (through a sieve or a piece of muslin).
2. Place in a bowl and add all the other ingredients.
3. Stir to combine and serve. (Can be made up to 3 hours in advance, keep covered in the fridge.)
