For this quick and easy recipe, chop and fry four potatoes, one onion and a few cloves of garlic in a large pan. After the mixture turns golden brown, remove from fire and strain well in a colander to remove excess oil. Beat four to five eggs in a bowl and then add the potato and onion mixture to this bowl. Transfer this mixture to a smaller pan and fry until golden. With the help of a tortilla flipper, flip and fry on the other side as well. And voila! Your Tortilla Espanola is ready!
