1 tbsp olive oil
1 onion, diced
1 tsp salt
1 green bell pepper or red orange
1 tsp cumin powder
1 garlic clove, minced
1 bay leaf
1 15oz can tomato diced
1 & 1/2 cups frozen corn kernels
1 32oz box chicken broth
1 lb chicken breast, boneless and skinless
1. In a pot put some oil in a medium heat. Saute some onions for 3 minutes. Add in salt, cumin, bell pepper, and garlic. Add in the bay leaf, corn kernals, tomatoes, and chicken stock. Add in 2 large chicken breasts.
2. Bring it to a boil and reduce it to simmer for 10-15 minutes. Take the chicken out and shred them. Place it back into the soup with lime juice.
3. Ladle it into a bowl and then crush some chips on top.
