1. Wash and thoroughly dry strawberries.
2. Place chocolate, butter and honey in a microwave-proof dish and microwave in 30 second intervals (stirring in between). When chocolate is melted, stir the melted chocolate mixture while adding small amounts of boiling water slowly until the texture of the melted chocolate is smooth.
3. Hold the strawberries by the stem and dip each one so that they are 3/4 covered by the chocolate mixture. Turn the strawberry for even coating.
4. Lay flat on a piece of parchment paper and allow to cool completely, until outer chocolate coating is firm.
