Scones are a must at any British Tea Party and they are surprisingly quick and easy to make. Served with strawberry jam and clotted cream you can't go wrong with tea and scones.

Cooking Recipe

Servings: 8

Ingredients for Scones
1/4 cup (60 grams) unsalted butter
2 cups (230 grams) self raising flour
A pinch of salt
2 tbsp (30 grams) caster/granulated sugar
1/4 cup (50 grams) of soft dried apricot, cut into small pieces (may be substituted with raisins or other dried fruit)
2/3 cup (50 ml) full fat whole milk

Directions for the Scones
1. Cut the butter into small cubes and with the tips of your fingers rub the butter into the flour in a mixing bowl, add the salt. Continue to sift the flour up and drop it back into the mixture until it forms a breadcrumb like texture. Add in the sugar and apricots or raisins and mix together.

2. Pour in the milk to create a well in the middle of the mixture. Mix to form a wet sticky dough.

3. Sprinkle flour on to your kitchen work surface and shape your dough into a 1 inch thick circular shape. Cut out triangular segments from your dough and place on a floured baking tray.

4. Scatter the dough segments with some more flour and place in a pre-heated oven at 350°F (180°C) for around 20 minutes until they feel light and airy.

Serve with clotted cream and strawberry jam.
