Make Sure You Have: an ice cream maker
1. Scald 3 cups of the milk with the scraped vanilla bean and honey. Mix the remaining 1/4 cup of the cold milk with the cornstarch and the egg yolk. Mix very well.
2. Temper into the scalded milk and continue to heat while mixing until thickened. Chill overnight.
3. Churn in an ice cream maker according to the manufacturer's directions. When almost frozen, add the chopped pistachios and continue to churn until frozen.
