Ingredients:
4-5 cups Vegetable Oil for deep frying
1/2 cup water
1 tsp sugar
1 pinch of salt
3 tbsp coconut milk
4-5 Manzano or baby bananas (plantains ok - not as sweet)
1 cup tempura batter (Bot Chien Tom - found in asian market)
dipping sauce:
1 tbsp sugar
1/4 cup coconut milk
sesame seeds
Directions:
Mix batter with water, sugar, salt, and coconut milk thoroughly. Add water as needed. Take a sheet of wax paper. Peel and cut bananas in half. Smash each half, one at a time inside the wax paper, folded over on itself. Dip the smashed banana halves in the batter, coating on each side.
In a medium saucepan heat vegetable oil until hot. Test by taking a skewer or chopstick and touching the bottom of the pot. If it starts to bubble, it is ready (350-375 degrees F). Cook bananas in oil, flipping on each side until golden brown (2 minutes or less each side). Remove and drain on paper towel.
To make the sauce, take 1 tbsp sugar and mix with 1/4 cup coconut milk. Heat in microwave for 30 seconds. Add a sprinkle of sesame seeds (optional).
Dip fried bananas into sauce and enjoy!
