This is a recipe done often by Chef Joanne Cooke's grandmother from Agira, Sicily. It is simple and she prepared it every Friday as she always had these ingredients in her kitchen cupboard. Cooking Recipe

Servings: 4
Cook Time: 20 minutes
Prep Time: 10 minutes
Ready In: 30 minutes

Ingredients:
1 3/4 pounds (800g) of halibut, with or without bottom skin (figure 150 -€ 200 g per person)
2 large white onions or shallots, sliced (amount to generously cover the halibut)
Handful or two of fresh cherry tomatoes
Fresh oregano
Salt and pepper to taste
Extra Virgin olive oil

Directions:
1. Sauté the onions over a low flame with a bit of olive oil or butter until it is slightly softened € about 5 minutes. Cut the cherry tomatoes in half and add them to the onion. Let the tomatoes soften a bit.

2. Place the halibut on a non-stick paper or use some olive oil at the bottom of your pan so that the fish does not stick. Salt and pepper the halibut and then cover it generously with the onion/tomato mixture. Garnish with fresh oregano and bake at 350°F (180°C) for 20 minutes or until just cooked.
