Italian Honey-Baked Salmon With Pistachio Topping

This healthy and easy dish draws upon many important and traditional ingredients of Sicily. Chef Joanne Cooke shares her recipe for baked salmon with honey, orange, breadcrumb and pistachio topping in this Grokker Premium video. While simple to cook, a large salmon filet looks impressive on a platter and feeds a large family or many guests. Chef Joanne suggests pairing this dish with a couscous for a full meal.

⅓ cups (50g) of pistachio nuts, non-salted, shelled and chopped
Handful of homemade bread crumbs
Parsley, chopped roughly
Orange zest
1 lb (600-800g) (12 oz) of salmon (allow 150-200g per person)
2-3 tablespoons honey
Salt and pepper to taste
Olive oil to drizzle

1. Season the salmon with salt and pepper. Spread the honey over the surface of the salmon. Coat the salmon with the breadcrumb mixture, patting it down so that it sticks to the honey. Spread the pistachio nuts on top of the breadcrumbs, sprinkle the parsley and orange zest over the salmon. Finish by lightly drizzling with olive oil.

2. Bake at 350°F (180°C) (gas mark 4) for 15-€20 minutes, depending on the size and thickness of the fillet.
