1. Combine eggs, salt, nutmeg, milk and stir well then set aside. Preheat oven to 450 degrees. Take a muffin pan or mini muffin pan and add your fillings. Put the cheese at the bottom followed by the ham and spinach. Pour in the egg filling to the brim. Bake 15-18 minutes. Take the quiche out of the oven and let cool for 10 minutes. Use a paring knife to extract the individual quiche bites.
