1. Add olive oil to your skillet over medium heat. Add onion and cook for about 3-5 minutes. Add the spinach and cover the lid for the spinach to wilt.
2. Lower the heat to low, and add in eggs. Mix all the ingredients until they are all incorporated. Season with salt and pepper to taste.
4. Toast the bread, spread a choice of your spread on the toast. Add avocado and red onion. Scoop up the egg and cheese from the skillet and place it on the toast.
