Ingredients:
6 boneless pork chops
Olive oil
1/2 of medium sized red onion fine diced
1 garlic clove fine diced
2 cups of cherries
1/2 cup of apple cider vinegar
1/2 cup of sugar
1/2 cup of water
Directions:
1. Get your pan hot!
2. Take a half of medium red onion and dice it up. Add olive oil in your hot pan then add your fine diced red onion. Now, fine dice garlic and toss it in your hot pan.
3. Take your cherries and chop them into chunks. Wait till the garlic and red onion has good color and then add in the cherries. You want to let it cook till the temperature is raised once again then use some apple cider vinegar to de-glaze. Lower the heat to medium and then let it reduce until it is thick, about 1/2 hour.
4. Add in 1/2 cup of sugar and 1/2 cup of water. While you let that reduce, season your pork chops with salt and pepper.
5. Throw the pork chops on the grill put them in an angle so you can get some awesome cross marks. Cook them for 5 minutes on each side. Once done plate the pork chops and then place the chutney on top.
