2 Italian sausages cut out of their casings
1 cup cheddar cheese
1/4 cup chopped chives
1 large avocado
1/4 cup sour cream
1/4 cup pico de gallo
1/4 cup fresh chopped cilantro
Salt and pepper to taste
1. Cook the sausage until browned and soak up the extra grease with paper towels.
2. Scramble 6 eggs and add cooked sausage, cheddar cheese and chopped chives.
3. Top with slices of avocado, a dollop of sour cream, some fresh pico de gallo and a little cilantro.
4. Serve with warm corn tortillas on the side.
