Ingredients:
3/4 pound ground turkey
1 zucchini, grated
1 carrot, grated
2 cloves garlic, minced
3/4 tsp dried thyme
¼ red onion, minced
3/4 tsp salt
1/4 tsp black pepper
1 large egg
1 tbsp olive oil
Whole Wheat English Muffins (Toasted)
Tomato, sliced
SuperSauce (recipe Follows)
Supersauce
¼ cup yogurt
zest of one lemon
2 tbsp minced dill
1 grated clove garlic
1 tsp sriracha
1 tsp salt
1 tsp pepper
Directions:
1. First, make the sauce. In a small bowl, whisk together all ingredients. Taste, season, keep cold until needed.
2. Next, make the burgers. Combine turkey, zucchini, carrot, garlic, thyme, and the onion.
3. In a small bowl, whisk the egg, salt, and pepper. Drizzle into turkey mixture. Mix until just combined. Form into 4 patties.
4. Cook in skillet with olive oil until cooked through. Transfer to English muffins. Top with sliced tomatoes and sauce
