Ingredients:
Stir-fried squid
10½ oz (300g) squid, washed, cleaned, dried, scored and sliced into 1 inch pieces
½ cup pineapple, chopped
½ cup cucumber, chopped
5 scallions
¼ cup shallots
½ cup Chinese celery
1 green pepper, chopped
2 tbsp vegetable oil
2 tbsp fish sauce
Pepper to taste
Salt to taste
Sweet and sour sauce:
1 tbsp sugar
½ lemon, juiced
2 tsp vinegar
1 tsp ketchup
Directions:
Sweet and sour sauce:
To make the sweet and sour sauce, mix sugar, lemon, vinegar and ketchup, 1 tsp corn flour, and 2 tsp of water.
Stir-fried squid
1. In a hot wok add 1 tbsp of vegetable oil and the scallions and allow them to soften. Add squid and stir-fry for 3 minutes, and then put to one side.
2. In the same wok add another tbsp of vegetable oil. When it reaches a medium-high heat, add the garlic and cucumber. Then add the shallots and the capsicum and allow these to soften for a further 2-3 minutes.
3. Then add the onions and the Chinese celery, and allow to soften again. Once softened add the pineapples and the sweet and sour sauce.
4. Finally, add the squid back into the wok, season the stir-fry with salt and pepper, and allow it to heat for a further minute before serving. Garnish the dish with the coriander, and serve with a dipping sauce of soy sauce and fresh chili.
