One of my favorite dishes from Southern Louisiana is the 2nd Line classic: Jambalaya. Not only do I love all the spice that the dish packs, but I love how easy it is to make. Once you've got the ingredients, you can produce the dish in under two hours time, which isn't bad considering it can be made in huge batches to feed a crowd. The most unusual ingredient in the dish is a type of ham widely found in the bayou, known as Tasso. While it's hard to find locally, it's easy to order online, and adds a huge amount to the dish.

5. Bacon-Wrapped Smoked Turkey
This recipe calls for many ingredients and some planning, but the finished turkey’s rich, smoky flavor and juicy meat is more than worth it. First, the turkey is brined in a cider-spice brine to season it inside and out. Then, it gets rubbed with butter, honey, and a barbecue spice rub. Next, it's wrapped in bacon and smoked on the grill. As the bird finishes cooking, it gets spritzed with apple juice to beautifully burnish the skin and keep the meat moist and flavorful.
