1. Pour 1 cup (250ml) of balsamic vinegar into a pan and bring to the boil. Allow it to reduce to approx. half the volume. At this stage the bubbles will be slower to pop resulting in a thicker consistency.
2. Remove from the heat and allow to cool. Finally add a good handful of freshly chopped mint. This sauce is wonderful with roast lamb or cutlets.
