2 russet or Yukon gold potatoes, cut into even chunks
1. Put the potatoes in cold water in a pot and bring to a boil. Add in the salt and bring it to boil for 25 minutes and then lower the heat and let it cook till it is falling apart.
2. Drain the potatoes and put them right back into the hot pot and start to dry them out over low heat. Use a hand masher to mash them into mashed potato.
3. Add in the cream and stir till it is mashed potato.
4. Finish with butter and chive.
