Ingredients:
5-6 sweet potatoes, chopped
Olive oil
Salt to taste
Pepper to taste
1 cup parmesan
½ cup pecans, roughly chopped
½ cup dark brown sugar
½ tbsp fresh thyme
1 tsp cayenne pepper
1 tsp smoked paprika
Directions:
1. Pre-heat an oven to 360ºF (180ºC). Place the sweet potatoes in a baking tray, add 2 tbsp of olive oil, ¾ cup of parmesan, season with salt and pepper, and mix thoroughly. Carefully cover the baking tray with tin foil and then place it in the oven for 30 minutes.
2. Prepare the topping by mixing together the pecans, brown sugar, thyme, cayenne pepper, smoked paprika, and 1 tbsp of olive oil.
3. Once the sweet potatoes are cooked through and tender, remove them from the oven and top them with the pecan mixture, and the remaining parmesan, and return to the oven for a final 10 to 15 minutes.
