Ingredients:
4 artichokes
1 lb of frozen green peas (preferred). You can also use fresh
1 medium-sized onion (grated)
Water for cooking
Small bunch of cilantro
1 teaspoon of salt
1/2 teaspoon of pepper
1/4 teaspoon of tumeric powder
1/4 teaspoon of ginger powder
pinch of saffron
2 tablespoons of olive oil
3 garlic cloves (crushed)
preserved lemons (optional)
1 1/2 pounds of beef (a section that contains bones, example: 7-bone steak)
Directions:
Step 1 – Marinating the Meat
1. Mix all the spices with 1-tbl spoon of water
2. Rub meat with spice mixture
3. Cover meat and let it marinate in refrigerator for 30 minutes
Step 2 – Cooking the Meat
1. On medium heat – drizzle olive oil in pan
2. Add the onion
3. Add the garlic
4. let the onion cook for 5-minutes
5. After 5-minutes add the beef
6. Cover pan and let beef cook for 10-minutes
7. At mid-point, turn beef to other side
8. Add Cilantro to meat
9. Add water to pan until meat is covered
10. Cover pan, increase heat to medium high and let meat cook for next 40 minutes. Stir time to time.
11. Check on level of water from time to time and add when necessary
Step 3 – Cooking the Artichokes
1. While the meat is boiling we are going to start cooking the artichokes
2. Boil water with (2) slices of lemon (she showed 2 halves in video)
3. Use glass baking pan (instead of lid) so artichokes are completely dipped in water
4. Once cooked, remove from boiling water and add cold water to cool them down
Step 4 – Adding Green Peas to Meat
1. After 40 minutes of cooking meat, add the peas to the meat
2. Add a little water if necessary
3. Cover pan, reduce heat & let the peas and meat cook for next 10-15 minutes on medium heat
Step 5 – Preparing the Artichokes
1. Clean the Artichokes
2. As soon as you finish cleaning artichokes, add to peas and meat so it doesn’t oxidize and change color
Step 6 – A few final details
1. Taste sauce and adjust spices accordingly (salt/pepper/ginger)
2. If you want to add preserved lemon, this is the time to do it. Take (1) preserved lemon, wash it with water to remove saltiness, cut it in 1/4s and add it to the Tajine.
3. Cover pan and let Tajine cook for the next 15 mintues or until done.
4. To serve the Tajine, first place meat on plate, then cover with sauce and vegetables.
5. Serve with Moroccan bread or French Baguette.
