Ingredients:
1 cup bacon, cut into chunks
1 lb beef chuck, cut into chunks
Salt & Pepper to taste
Olive oil
1 onion, diced
1 green bell pepper, diced
1 pepper, diced
2 bay leaves
3 cloves of garlic
Beef stock
Tomato Sauce
Ancho spice
Pasea spice
Brown sugar
Cumin
Cinnamon stick
Oregano
Cilantro
Lime Juice
Cheddar cheese
Red onion, diced
Scallions
Directions:
1. In a pot cook the bacon and then take them out. Take the meat and season it with salt and pepper. In the same pot cook the beef just to brown it and take it out.
2. Add olive oil and then cook the onions, bell peppers, and pepper. Add in the 2 bay leaves and garlic. Then add the beef stock and tomato sauce and stir. Add the meat back into it and then add all the spices. Let it simmer for until beef is tender, 1 & 1/2 to 2 hours.
3. Open the lid and take out the fat that is on the top of the chili. Add in oregano, cilantro, and lime juice. Take out the bay leaves and cinnamon stick. Add in more salt & pepper to taste and more spices if needed.
4. Pour some chili into a serving bowl and top it off with cheddar cheese, red onion, and scallions. Enjoy!
