3 cups fresh basil
3/4 cup raw untoasted pine nuts
2/3 cup chopped parmesan cheese
3/4 cup extra virgin olive oil
Salt for seasoning to taste
1. Place parmesan into food processor and break down to smaller pieces. Add in raw untoasted pine nuts and fresh basil and whiz it until it is finely chopped.
2. Drizzle in extra virgin olive oil and continue to mix. Use the spatula to scrape down the sides and whiz it some more.
3. Once you have the right consistency you can add any type of seasoning you want (salt, spices, etc).
4. Top it off with shaved parmesan and you are ready to serve!
