Ingredients:
The Salty Version
1 cucumber
Juice of a ½ a lemon
Fresh thyme
1 tsp – olive oil
Salt and Pepper
The Sweet Version
1 cucumber
1/4 cup – orange juice
Sugar to taste
1/4 tsp – orange blossom water
Directions:
Recipe 1 – The Salty Version
1. Peel cucumber, grate using medium sized grater, add rest of ingredients to grated cucumber (lemon juice, fresh thyme, olive oil, salt and pepper) and remove leaves from thyme branch.
2. Add salt and pepper and serve cold.
Note: you can adjust all the ingredients to your taste.
Recipe 2 – The Sweet Version
1. Peel cucumber, grate cucumber, mix rest of ingredients with grated cucumber (orange juice, sugar, orange blossom water).
2. If you would like to add more texture to the salad, you can add chopped iceberg lettuce to the cucumber. Serve Cucumber Salad cold
