Ingredients:
12 large shrimp, steamed
½ cucumber, julienned
1 cup snow peas, julienned
1 cup bean sprouts
½ fresh coconut, shelled, shaved
1/4 cup each cilantro, mint, thai basil, chopped
1 green and 1 red chilli, sliced
Dressing:
1 green chilli, finely chopped
1 lemongrass, outer layers discarded, root finely chopped
Small knob of ginger, finely chopped
Juice of 2 limes
Pinch of sugar
4 tbsp vegetable oil
Directions:
1. All ingredients in a bowl, mix.
