Ingredients:

Cucumber chopped into 1" cubes
Thinly sliced red onions
2 whole tomatoes roughly chopped
1 yellow or red pepper diced large
1/4 cup basil
A few leaves of tarragon whole
2 tbsp balsamic vinegar
1 tsp dijon mustard
6 tsp olive oil

Directions:
1. Start with vinegar before whisking in the oil and finally adding the mustard to encourage emulsification.

3. Toss the salad through with the croutons and allow the croutons to soak up the vinaigrette by leaving to rest for 20 minutes before serving. Finish with a drizzle of balsamic glaze.
