Tuscan Panzanella Salad

This popular summer salad combines tomatoes, onions, crisp cucumbers and delicious home made croutons. Served with Sage's own vinaigrette and combined with fresh herbs the flavours come together and soak into the croutons making a tasty appetiser for dinner or a light lunch. Make sure to check out Sage's crouton and balsamic glaze videos in order to perfect this salad.

Make Sure You Have: frying pan and mixing bowl

Handmade Croutons (see
Cucumber chopped into 1" cubes
Thinly sliced red onions
2 whole tomatoes roughly chopped
1 yellow or red pepper diced large
1/4 cup basil
A few leaves of tarragon whole
2 tbsp balsamic vinegar
1 tsp dijon mustard
6 tsp olive oil
1 tsp balsamic glaze (optional) - see

1. Start with vinegar before whisking in the oil and finally adding the mustard to encourage emulsification.

2. Directions for the salad

3. Toss the salad through with the croutons and allow the croutons to soak up the vinaigrette by leaving to rest for 20 minutes before serving. Finish with a drizzle of balsamic glaze.
