1 ¼ cup un-sulfured apricots
2 tbsp cashew butter
2 tbsp melted coconut oil
3 tbsp chia seeds (more for rolling)
¾ cup ground almonds
1. In a food processor pulse the apricots, cashew butter and coconut oil until it turns into a rough paste. Then add the ground almonds and chia seeds and pulse up again.
2. Roll the mixture into balls about the size of a ping pong. You can then roll them in more chia seeds to coat them. Put into the fridge for 1-2 hours to set. Keep them in the fridge until you want to eat them.
