Ingredient:
3 cups rotini pasta, dry
¾ cup salsa (can add more)
2 teaspoons taco seasoning (can add more)
½ green bell pepper, diced
½ cup black olives, sliced
¼-1/2 cup red onions, diced
1 cup cherry tomatoes, quartered
â…” cup sweet corn kernels
â…” cup black beans, rinsed and drained
1 cup romain lettuce, chopped
2 avocados, cubed
Sharp cheddar cheese, shredded
Directions:
1. Cook pasta according to package until al dente then drain, rinse with cold water and set aside.
2. Toss cooled pasta with salsa and taco seasonings.
3. Add in bell pepper, black olives, onion, cherry tomatoes, corn, & black beans.
4. When ready to serve add romaine lettuce, avocados, and shredded cheese.
