Serves: 6
Ingredients:
4 cups chopped kale (washed, drained, thick stems removed, and cut into pieces) (or a 10 oz bag of prepared kale from Trader Joe's or elsewhere)
1 lb pasta, smaller shaped pasta of choice
1 lb Italian sausage spicy or sweet, casings removed
1/2 cup finely chopped onion
2 tbsp olive oil
5 to 7 garlic cloves, minced
1/2 cup chicken stockÂ…
1 cup of cream (optional)
Salt and pepper to taste
Directions:
1. Bring a pot of water to a boil. Add kale and blanch for about 4 minutes. Scoop kale out with a spoon and drain, and leaving water boiling in pot , so that you can cook pasta next. Set kale aside.
2. Add some salt seasoning to the water in the pot and cook the pasta according to the package directions. Drain and set aside. In a heavy saucepan or the same pot you cooked pasta in, add olive oil, chopped onion and sausage to pot and stir, breaking up the sausage with the back of the spoon.
3. Cook until sausage is fully cooked and slightly golden brown. Add chopped garlic and kale, and cook together, mixing until everything is well incorporated and kale has become more soft and pliable, about 2 minutes. Add chicken stock, and cook for an additional 1 minute.
4. Add pasta and toss all together. Finish with cream (optional) and season with salt and pepper. Serve, topped with your choice of cheese.
