Ingredients:
1 can black beans, drained and rinsed
1 red bell pepper, chopped
1/2 red onion, chopped
1/3 cup plain breadcrumbs, plus more if needed
1 tbsp chili powder
1 egg
2 tsp salt
1/2 tsp black pepper
2 tbsp vegetable oil, for pan
1 whole-wheat hamburger bun
Shredded cheddar cheese
Sour cream
Minced red onion
Sliced scallion
Sliced tomato
Sliced pickles
Directions:
1. Preheat a non-stick pan lightly coated with a thin layer of vegetable oil to medium-high.
2. Puree black beans, red bell pepper, onion, breadcrumbs, chili powder, egg, salt and pepper in a food processor until a smooth paste forms. Add more breadcrumbs if needed for mixture to hold together. Shape into patties. Cook patties 3 minutes per side or until a dark crust forms on each side. Remove to bun and add your favorite toppings.
