Easy Cake Pops Recipe

1 store bought pound cake,
4 oz cream cheese, softened
4 tbsp butter, softened
3 cups powdered sugar
4 tbsp lemon juice
1 12 oz bag white chocolate chips
1 tbsp vegetable shortening
popsicle sticks, cake pops sticks or thick bamboo skewers
colorful sprinkles or jimmies

1. In a large bowl, crumble pound cake into nickel size chunks and set aside. In another large bowl or electric mixer beat butter, cream cheese, powdered sugar and lemon juice until fully combined and fluffy in texture.

2. Combine frosting with cake chunks, roughly stirring to coat most of the chunks with frosting. Roll the combined cake and frosting into golf ball sized balls and place on a baking sheet. Allow balls to chill in the refrigerator for at least 1 hour or freezer for 30 minutes.

3. Meanwhile, melt white chocolate and vegetable shortening in a microwave safe bowl, stirring every 30 seconds, until completely smooth. Insert pop stick into a chilled cake ball and dip in melted white chocolate. Tap against side of bowl to remove excess and immediately sprinkle with jimmies to decorate. Allow pop to harden upright by standing it in a cup full of rice or poking it into a block of styrofoam.
