1 cup (200g) unsalted butter, at room temperature
2 oz (60g) gorgonzola
1 tbsp tarragon, diced
Sea salt to taste
1 tbsp olive oil
1. In a bowl mix together the butter, the gorgonzola, the tarragon, the sea salt, and the olive oil. Make sure that the olive oil is added last. The amount of oil should be adjusted according to how much the butter needs to soften.
2. Ladle the mixture out onto a piece of parchment paper, and shape it into a long roll. Place this into the fridge for about 40 minutes, or until it becomes hard enough to work with, and serve cold.
