(Depends on how much you want to make)
1. Add water to pot and then add sugar to water and without stirring, make sure mixture is consistency of wet sand.
2. Place pot over high flame and allow to cook, undisturbed until it begins to color. Once sugar has started turning amber, keep an eye on it as it will be bitter if it gets too dark at this point, to stop the cooking, plunge bottom of pan into prepared ice bath or pour out caramel onto baking pan lined with silicone mat or parchment.
