Ingredients for Homemade Sriracha:
1 & 1/2 pounds red jalapeno peppers, stemmed and seeds removed from half the peppers, roughly chopped
1 habanero pepper, stemmed and seeded, roughly chopped
6 cloves garlic
1/2 cup distilled white vinegar
1/2 cup water
1/4 cup light brown sugar
1 tbsp kosher salt
Savory Waffles:
2 cups all-purpose flour
1 tbsp thyme leaves, chopped
1 tbsp chives, chopped
2 tsp salt
1 & 1/2 tsp baking powder
1 tsp baking soda
1 tsp sugar
1 tsp ground black pepper
2 eggs
2 cups buttermilk
1/4 cup butter, melted
Non-stick spray
Honey
Homemade Sriracha sauce
6 scallions, thinly sliced, for garnish
Special Equipment: Waffle Iron
Directions for Homemade Sriracha:
1.Place chilies, garlic cloves, vinegar and water in a blender and puree until very smooth, 4-5 minutes. Pour the mixture into a medium saucepan over medium heat. Add the sugar and salt, bring to a simmer and cook until the mixture has reduced by 1/3 and thickened slightly, about 20 minutes. While the mixture is simmering foam will float to the top, skim this off and discard.
2.When the sauce has thickened remove from heat, cool 5 minutes then puree in the blender once more. Pour the mixture through a strainer, pushing down on the puree to ensure all of the sauce goes through but leaving behind any seeds and larger chunks of chile. Place in an airtight container and refrigerate for up to 5 months.
Directions for Savory Waffles:
1.In a large bowl whisk to combine flour, thyme, chives, salt, baking powder, baking soda, sugar, and black pepper. Reserve.
2.In another bowl whisk together the eggs, buttermilk and melted butter. Gently whisk wet ingredients into the dry until just incorporated, be careful not to over mix. Let mixture sit for 10 minutes while the waffle iron comes to heat.
3.Spray waffle iron with non-stick spray. Ladle the recommended amount of batter into the iron and cook per manufactures' directions or until golden brown.
4.Serve waffles with honey, homemade Sriracha and green onions.
