· 2 slices of whole grain bread
· 8-10 grape tomatoes
· 12 bite-sized mozzarella balls or you can slice larger rounds of fresh mozzarella
· 4 large fresh basil leaves
· 1 small to medium sized avocado
· 2 tablespoons of balsamic vinegar
· Salt and pepper
· Start by toasting the bread.
· Chop the tomatoes, Mozzarella and basil into small, bite-sized pieces.
· Mash the avocado in a bowl, and add a little salt and pepper.
· Spread the mashed avocado over the toast. Then add the chopped tomatoes, mozzarella and basil on top.
· Add a little drizzle of balsamic vinegar to finish things off.
