Get an early taste of Mediterranean Eating with this simple recipe that makes an incredibly delicious and nutritious breakfast! You may already be familiar with the trendy Avocado Toast, but for this recipe we’re adding a Mediterranean flair (and nutrition benefits) of tomatoes, mozzarella cheese, and fresh basil to really take it to the next level. Let’s get into the kitchen!

· 2 slices of whole grain bread
· 8-10 grape tomatoes
· 12 bite-sized mozzarella balls or you can slice larger rounds of fresh mozzarella
· 4 large fresh basil leaves
· 1 small to medium sized avocado
· 2 tablespoons of balsamic vinegar
· Salt and pepper

· Start by toasting the bread.
· Chop the tomatoes, Mozzarella and basil into small, bite-sized pieces.
· Mash the avocado in a bowl, and add a little salt and pepper.
· Spread the mashed avocado over the toast. Then add the chopped tomatoes, mozzarella and basil on top.
· Add a little drizzle of balsamic vinegar to finish things off.
