These pancakes will fill your kitchen with a wonderful cinnamon smell that will have the kids running down for breakfast. In this Grokker Premium video Maya Adam shares this simple, fast and delicious recipe that has been handed down through the years in her family.

Cooking Recipe

Ingredients:
2 eggs
2 tbsp sugar
1 tsp vanilla extract
â…“ cup milk
2 tbsp walnut or almond oil (or melted butter)
1 cup gluten-free baking mix (like Pamela's, with a rising agent)
¼ tsp cinnamon, ground
1 large (or two small) apple, finely chopped
1 tbsp butter

For the cinnamon sugar:
2 tbsp sugar
¼ tsp ground cinnamon

Directions:
1. Crack eggs into a mixing bowl, add sugar and vanilla extract, and mix it up. Add in milk and walnut or almond oil, and whisk again.

2. Add gluten free baking mix and ground cinnamon and whisk again. Chop apple and add to the mix.

3. Heat a pan with the butter over medium high heat. Dollop out the batter onto the pan to make pancakes.

4. Mix together sugar and cinnamon in a small bowl.

5. Flip the pancakes when you see bubbles, then cook for another 30-60 seconds. Plate the pancakes, add the cinnamon sugar on top, and serve warm.
