Ingredients:
• 5 ounces mixed spring greens
• half a small red onion
• 2 cups cherry tomatoes
• 2 cups whole grain croutons
• ½ cup parmesan cheese
• ⅓ cup sliced pepperoncini peppers
• protein of your choice
Italian vinaigrette ingredients:
• 3 tablespoons olive oil
• 1 tablespoon red wine vinegar
• 1 teaspoon dijon mustard
• ½ teaspoon dried oregano
• ½ teaspoon fine sea salt
• ¼ teaspoon black pepper
• 1 small clove garlic
Directions:
Vinegarette
• Add all your ingredients to a bowl or container and mix
Salad
• Chop all the veggies
• Add the veggies to a bowl
• Enjoy!
